Spinach Quiche


Another super easy recipe for the lovers of spinach :)


What you need:

For the crust:

  • 300gr flour
  • 100gr shredded butter 
  • 1 egg
  • 2 tbls milk
  • salt

Mix all the ingredients except the milk.  Stir well and then add the milk and keep stirring until it's smooth. Put it in the fridge for 10minutes. Lightly grease a 25cm cooking pan and put the dough in it and then again in the fridge for 30 minutes. 

For the filling:
  • 1 tbls olive oil
  • 1 onion, chopped
  • 1 package frozen chopped spinach, thawed and drained
  • 6 eggs
  • 200gr smoked cheese
  • 150gr cheese
  • salt & pepper
Preheat the oven to 180 degrees C. Heat oil in a large pan over medium-high heat. Add onions and cook, stirring ocassionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, all the cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared cooking pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving. 
Cover it with a towel, otherwise it will  be crusty on the edges.
