Raspberry muffins

It's raspberry season and time to make raspberry muffins 



Ingredients:
1cup  + 2tbsp flour
1tsp baking powder
1/2 tsp baking soda
pinch of salt
2 eggs
3/4  cup sugar
1/2 oil
1/2 buttermilk 
2 tsp vanilla extract

How to do:

First preheat the oven to 180 degrees.
In a large bowl mix the dry ingredients first: flour, baking powder, baking soda, salt and sugar. Add the eggs and mix well. 
In a small bowl add the buttermilk, oil and vanilla extract and mix. 
Add the wet ingredients  to the dry ingredients and mix well and then add raspberries. 
For the crumble, on a plate mix 3 tbsp flour with 30g butter and 1tbsp sugar and add it on top. 
Put it in the oven for 20 minutes.

Strawberry Pavlova

It's weekend. Time to make something sweet. And as the usual a super easy recipe.
On today's menu we have  Pavlova, a meringue cake named after the russian ballerina Anna Pavlova. 
The cake is crusty on the outside and super soft on the inside and on top you can put whatever you want from vanilla/chocolate/whipped cream and fruits. 
And you only need 4 ingredients that I'm sure you have in your kitchen.


 Ingredients:
3 egg whites
150g caster sugar
2tsp vinegar
2tsp vanilla extract


For topping:
1 package whipped cream 
Strawberries


How to make:

Preheat the oven to 150C.
Beat the egg whites with a little bit of salt until it's smooth and then whisk in the sugar, 1 tbsp at a time. After you put half of the sugar add 1 tsp of vinegar and then continue with the sugar and at the end add the rest of the vinegar and vanilla. And continue mixing until the meringue looks glossy. Use a pencil and mark out the circumference of a dinner plate on baking paper and spread the meringue inside the circle.


Put the meringue in the oven for about 40-50 minutes checking it carefully from time to time. After 15 minutes turn the pan to not burn the meringue and then again after 15 minutes. If you think is ready turn off the oven and leave it there to cool out completely. 
Prepare the whipped cream, put it on top of the meringue and add the strawberries. 
And voilà you have a delicious and easy cake.
